On a day complicated by endless multitasking, last-minute errands, and other unexpected stressors, there are few things better than rich, savory cuisine shared among friends and family.  Whether enjoyed in the welcoming ambience of a restaurant or brought to one’s home, Italian food offers something for everyone.  Pasta Allegro, LLC (also referred to as “the Company”) is a start-up fast-casual Italian restaurant that will commence operations in Portland, Oregon immediately upon receipt of funding. Our goal is to become the next national casual dining chain.  Pasta Allegro will offer Italian cuisine ready to order and primarily assembled by the customer.

Key Features

Several dry pasta shapes will be displayed in wine barrels so that customers can easily view their choices.  Once the pasta is chosen, the customer’s portion will be dropped into a pasta cooker for four to five minutes.  During that time, customers will choose their sauce preference, and then will move to topping choices.  Toppings will include an assortment of meats and gourmet sausages, grilled veggies, fresh veggies, marinated options, and a variety of cheeses.  Once the pasta has finished cooking, the meal will be assembled according to the customer’s selections.  The sales cycle will average seven to ten minutes, including cashiering.  The Company will apply the same meal assembly concept to personal sized pizzas, calzones, and Panini sandwiches.  To keep inventory concise, customers will make component choices from the same offerings available for pastas.  Pricing will be a la carte style for those menu items, starting from a base price, and calculated according to the number and type of toppings selected. 


In addition, Pasta Allegro will offer grab-and-go deli options during lunch hours, including salads, a daily soup option, a daily Chef’s Choice special, and a dessert case. Beverages will consist of a small wine and beer selection, fountain drinks, bottled drinks, Italian sodas, and espresso drinks. Fruit smoothies will be offered in the summer months, and will continue throughout the year if popularity will support the added inventory. For additional revenue streams, Pasta Allegro will offer curbside service, delivery service within a five-mile radius, catering, in-store retail items, and children’s cooking-themed birthday parties. About the Business and Team

Pasta Allegro currently has one owner, Tammy Hobrecht. Born and raised in south Texas, Tammy was raised in a culture where family came first, and good food was a staple in everyday life. From gatherings, to celebrations, to socializing, good food can always be found to bring friends and family together. Tammy acquired her drive to please people with food, from her father, Calvin Hobrecht, who passed away in 2010. He often aspired to be a chef, but just didnt have the education or business sense to bring his dreams to reality. Through years of education and business experience, Tammy hopes to fuse the love for creating a flavorful and satisfying dish, with the ability to monitor a business and create profits.

Tammy Hobrecht has a variety of professional experience in a number of fields.  Currently, Ms. Hobrecht serves as a Controller, HR Lead, and Systems Administrator with a local building material distributor.  Her responsibilities as a Controller include supervising a full accounting staff, auditing workload and monitoring progress, conducting performance reviews, facilitating any third-party audits, creating forms and documents for company-wide use, initiating and monitoring cash flow and investments, and providing timely/accurate financial information to ownership.  In the positions of HR Lead and Systems Administrator, Ms. Hobrecht’s duties include processing weekly and salary payrolls, benefits administration, serving on the Pension and Safety committees, and providing HR related counsel to management. 

In relation to Restaurant Management, Ms. Hobrecht has held management positions at multiple McDonald’s restaurants owned by the Salazar Family in South Texas.  She values the mentorship she received working under the very accomplished Joe and Lita Salazar, now of San Antonio Texas.  The Salazars recently opened their 4th location in the San Antonio metro area, have been recognized for their store performance and quality; Mrs. Salazar recently served as the President of the San Antonio Restaurant Association.  While working for the Salazars over the span of 8 years, Ms. Hobrecht obtained valuable knowledge about food costs, managing labor, and quality control.

Ms. Hobrecht holds a Bachelor’s degree in Business Administration with an emphasis in Accounting from Texas A&M-Corpus Christi.  She has also completed numerous trainings in relation to her membership in the East Portland Employers Council, Institute for Management Accountants, and SHRM Human Resources in Portland, Oregon.
