The Pitch

As long-time locals (and lucky enough to live full-time) in Forest Lakes, we share a vision of revitalizing our community's favorite pub with a fresh look, familiar menu and a new name. The 260 Roadhouse will showcase the best of Rim Country by:

  • Bringing back local favorites like specialty burgers, pizzas and Friday fish fry;
  • Adding a special twist to traditional bar fare as well as craft brews and classic cocktails;
  • Showcasing local artists with unique gifts, live music and special themed events. 

The Destination

"A popular stop on Arizona's Highway 260, where locals and tourists alike can enjoy a hot meal, a cold drink, friendly conversations and a sense of community."

The 260 Roadhouse will be the preferred gathering place for locals, tourists and highway travelers alike. Offering a hybrid model of a fast-casual dining experience that allows for providing exemplary service, a selection of craft beer and wines, classic cocktails, and delicious foods in a relaxed comfortable setting.  In addition, we plan to showcase the history of the community in its décor, promote local artists through consignment and live music as well as also offer semi-private dining space for special events.

The Journey

We believe that our competitive advantage with our concept, service, location, and networking are the right ingredients to contribute to the success of 260 Roadhouse. Our main concept and goal is to treat each guest with a level of service that leaves them feeling welcomed and truly feel "like a local". Quality drinks, competitive prices, knowledgeable and fun staff, and stressing the importance of speed of service will all help contribute to repeat business. Visible from the highway, the location, which includes a pet-friendly patio, will create a great one-of-a kind open and social experience for customers to enjoy.

To provide exemplary service, the 260 Roadhouse will provide a hybrid service model that allows guests to have more control over their dining timeline using restaurant technology to "order and pay" from their seat.   Servers will be able to greet diners, offer menu suggestions and deliver food while guests can continue to order drinks and additional food, such as desserts, without waiting.

With an established network of local suppliers and excited workforce, we will continue to seek out new relationships with potential customers, vendors, and partners through organizations in the area to help us grow our brand.

The Locals

Trina Cooper - Front of House

 


A highly valued member of the Forest Lakes community, Trina will be responsible for front of house operations. Having previous experience delivering superior food and beverage service, Trina will oversee the dining room operations, training and scheduling quality front of house staff, ensuring health and safety standards are adhered to, and maximizing the customer experience and satisfaction.


Grant Cooper - Back of House

 


With more than five years of experience working as the cook at the existing location, Grant brings his passion for the culinary arts and the vision for the Roadhouse to life. Grant will be responsible for overseeing all aspects of the restaurant's kitchen operations; including but not limited to supervising food prep and cooking, quality control and plating, ensuring sanitation and safety standards in the kitchen, equipment maintenance, health inspections and inventory management.


Stephanie Weigold - General Operations

 


With over 30 years’ of experience in business management, Stephanie focuses her skills on both back-end organizational needs and the front-end customer experience. Stephanie will be responsible for the financial management, technology and marketing for the venue. Stephanie and her husband, Jim, realized their dream of living full-time in Forest Lakes in 2016, however, the Weigold family have been long-time summer-time residents since the late 70s.


The Reward

Community involvement and support is an important aspect of our pub, or "public house", concept. As a token of appreciation of your financial pledge, we have put together rewards that we hope will feed your heart (and your stomachs)!  We want to recognize our communtiy in a special way throughout the venue by acknowledging your generousity, kindness and shared belief in our vision.

We are asking for your pledge to support start-up costs which include:

  • Renovate and remodel interior, patio and restrooms
  • Repair and/or replace kitchen/bar equipment
  • Start-up inventory and payroll needs
  • New monument signage
  • Local advertising
